In October 1995, the potato became the first vegetable to be grown in space. This was part of a joint project between NASA and the University of Wisconsin to find ways to feed astronauts or space colonies.
I betcha UofW made some good taxpayer bucks out of this. On the other hand, I can't imagine, anything I would rather eat on an 18 year voyage to another planet.

Yes, you're right, I hadn't thought of the funding angle.
Like you, I'd rather have a BBQ chicken and chips or a Vegemite sandwich, than plain old spuds!
